Here at The Spitfire Club, we hosted our first-ever event last night. It was successful and a ton of fun, but one of the unexpected wins of the night was a signature cocktail we served that we called "The Spitfire". Everyone loved it so much, we thought it might be fun to share with you. Enjoy!
The Spitfire
1 oz Tequila Blanco (we used Espolon)
1 oz Grapefruit Juice
Dash of Jalapeño-infused Simple Syrup (recipe follows)
Prosecco
Stir first three ingredients, serve over ice and top with prosecco! Add a squeeze of lime for extra zest.
Jalapeño-Infused Simple Syrup
1 cup turbinado/raw sugar
1 cup water
1 halved jalapeño pepper (without stem)
Combine sugar and water in a small sauce pan. Heat over medium-high, stirring frequently until boiling. Reduce heat to a simmer and add jalapeño. Stir frequently for three minutes, then remove from heat and allow to steep for 20 minutes. Strain pepper out and serve!
